This is a quick, simple and delicious meal you can have in half an hour. Perfect for those times you get back late from work or the kids just can’t wait to eat something!
|250g Basmati Rice||400g vegetable mix (Beans, Peas, carrots, corn) or you could use a frozen bag of mixed vegetables to be really quick!|
|1 Vegetable Stock Cube||2 tbsp. Geo Organics Korma Curry Paste|
|Handful of roasted & salted Cashews|
- Boil 600ml of water.
- Get a large microwaveable bowl and add the Rice and vegetables. Add the boiling water and crumble in the stock cube and stir in the curry paste.
- Cover mixture with cling wrap leaving a small gap on the side to allow steam to exit. Cook in the microwave for 12 minutes on full power.
- Remove from microwave and let stand for 5 minutes to continue cooking. Fluff up the rice, scatter the cashews on top and serve. Serves 4
