Super-Fast Veggie Biriyani

This is a quick, simple and delicious meal you can have in half an hour.  Perfect for those times you get back late from work or the kids just can’t wait to eat something!

Ingredients:

 

250g Basmati Rice 400g vegetable mix (Beans, Peas, carrots, corn) or you could use a frozen bag of mixed vegetables to be really quick!
1 Vegetable Stock Cube 2 tbsp. Geo Organics Korma Curry Paste
Handful of roasted & salted Cashews  

 

Method:

 

  1. Boil 600ml of water.
  2. Get a large microwaveable bowl and add the Rice and vegetables. Add the boiling water and crumble in the stock cube and stir in the curry paste.
  3. Cover mixture with cling wrap leaving a small gap on the side to allow steam to exit. Cook in the microwave for 12 minutes on full power.
  4. Remove from microwave and let stand for 5 minutes to continue cooking. Fluff up the rice, scatter the cashews on top and serve.  Serves 4
