Salmon Burgers



1 cup finely chopped red onion

1/4 cup chopped fresh basil

1/4 cup chopped fresh parsley

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 (around 500g) salmon fillet, skinned and chopped

1 large egg

1 cup breadcrumbs

8 slices sourdough bread, toasted


Place onion, basil, parsley, salt, pepper, salmon, egg & breadcrumbs into a food processor and process until smooth.

Divide mixture into 4 equal portions shaping each into a thick patty.

Lightly oil a frying pan with olive oil and heat to a medium-high heat. Add salmon patties and cook for 3 minutes on both sides.

Serve patties on toasted bread. You can add some lettuce leaves for some extra freshness.
