Prosciutto & Plum Sandwiches

Prosciutto and plum Sandwiches


1/4 cup finely chopped dried figs

1 tablespoon fresh lemon juice

1/4 teaspoon peeled & grated fresh ginger

1/3 cup goat cheese

4 slices sourdough grain bread, toasted

1 cup loosely packed rocket

2 ripe plums, cut into thin wedges

100g very thin slices of prosciutto



Combine first 3 ingredients, stir together and set aside.

Spread goat cheese evenly over each bread slice. Divide rocket, plum wedges and prosciutto evenly over slices of bread. Drizzle each sandwich with about 1 tablespoon fig/lemon juice mixture and serve
