Looking for a great alternative salad for this time of year? Then this one is perfect for you. Sounds a little strange but believe me its delicious!
|600g Parsnips||10 Dates (pitted)|
|2 tbsp. roughly chopped Mint Leaves||150 g Yoghurt|
|1 tbsp. Lemon Juice||2 tbsp. runny honey|
|2 tbsp. olive Oil||Salt & Ground pepper (to taste)|
- Peel the parsnips and cut lengthways. Remove any woody center and discard. Grate the parsnip coarsely into a bowl.
- Add the dates, mint, yoghurt, honey, lemon juice & olive oil into the bowl.
- Add salt & pepper to taste and gently toss the ingredients to combine.
- Serve immediately. Serves 6.
