Parsnip Yoghurt & Date Salad

Parsnip Salad

 

Looking for a great alternative salad for this time of year? Then this one is perfect for you. Sounds a little strange but believe me its delicious!

 

Ingredients:

 

600g Parsnips 10 Dates (pitted)
2 tbsp. roughly chopped Mint Leaves 150 g Yoghurt
1 tbsp. Lemon Juice 2 tbsp. runny honey
2 tbsp. olive Oil Salt & Ground pepper (to taste)

 

Method:

 

  1. Peel the parsnips and cut lengthways. Remove any woody center and discard. Grate the parsnip coarsely into a bowl.
  2. Add the dates, mint, yoghurt, honey, lemon juice & olive oil into the bowl.
  3. Add salt & pepper to taste and gently toss the ingredients to combine.
  4. Serve immediately.  Serves 6.
